Mayo and Mustard Cod
- 1/4 c. light mayonnaise
- 1/2 tsp. Dijon mustard
- .13 tsp. salt
- .13 tsp. coarsely ground black pepper
- 4 small cod steaks (3/4 inch thick)
- Preheat broiler.
- Lightly spray rack in broiling pan with nonstick cooking spray.
- In small bowl, mix mayonnaise, mustard, salt, and pepper; set aside.
- Place cod steaks on rack in broiling pan.
- With broiling pan at closest position to source of heat, broil cod 7 minutes.
- Remove pan from broiler; do not turn cod over.
- Spread mayonnaise mixture on top of cod.
- Return pan to broiler and broil cod 1 to 2 minutes longer, until mayonnaise mixture is lightly browned and bubbly and cod flakes easily when tested with a fork.
