Orange-Lime Sweet Potatoes

• 1 tablespoon olive oil
• 1 cup chopped onion
• 1 garlic clove, minced
• 1 lb sweet potato, peeled and cut into 1 inch pieces
• 1 cup orange juice
• 14 cup lime juice
• salt and pepper

1. Saute onion and garlic in oil.
2. Add sweet potatoes and juices.
3. Heat to boiling.
4. Reduce to a simmer.
5. Cook until the potatoes are just tender.
6. Season to taste with salt and pepper.
