Artichoke Salad Recipe
- 6 x globe artichokes
- 3 x tomatoes sliced
- 1 x green pepper de seeded and diced
- 1 Tbsp. minced parsley
- 80 ml extra virgin olive oil
- 2 Tbsp. wine vinegar
- 1 clv garlic crushed
- 1 x salt pepper sugar
- Cut off the tips of the artichoke leaves and boil the artichokes for 35 min in well salted water.
- Drain.
- Pull the leaves apart and cut off the lower edible parts.
- Cut the artichoke hearts into narrow strips.
- Mix the artichokes tomatoes and green pepper.
- To make the dressing mix the extra virgin olive oil with the vinegar garlic crushed with salt pepper and sugar.
- Pour over the salad and mix well.
- Allow to stand for 20 min sprinkle with minced parsley and serve.
