Artichoke Salad Recipe

  1. Cut off the tips of the artichoke leaves and boil the artichokes for 35 min in well salted water.
  2. Drain.
  3. Pull the leaves apart and cut off the lower edible parts.
  4. Cut the artichoke hearts into narrow strips.
  5. Mix the artichokes tomatoes and green pepper.
  6. To make the dressing mix the extra virgin olive oil with the vinegar garlic crushed with salt pepper and sugar.
  7. Pour over the salad and mix well.
  8. Allow to stand for 20 min sprinkle with minced parsley and serve.
