Jamaican-Style Jerk Chicken

  1. Place chicken in large shallow dish.
  2. Mix 3/4 cup (175 mL) dressing (or 2 Tbsp.
  3. 30 mL dressing for trial recipe) with all remaining ingredients; spoon over chicken.
  4. Turn chicken to evenly coat.
  5. Refrigerate 1 hour to marinate.
  6. Refrigerate remaining dressing until ready to use.
  7. Heat greased grill to medium heat.
  8. Grill chicken 30 to 35 min.
  9. or until done (170 degrees F), turning occasionally and brushing each drumstick with 1/2 Tbsp.
  10. (7 mL) of the remaining dressing.
