Potato Cheese Croquettes
- 2 cups mashed potatoes cold
- 1 each eggs beaten
- 1 cup cheddar cheese grated
- 1 x salt to taste
- 3/4 teaspoon accent
- 1/2 cup bread crumbs fine
- 1/2 cup milk
- Break up potatoes.
- Beat egg in blender until frothy.
- Add potato pieces gradually, beating at medium speed until blended.
- Stir in cheese, salt, and accent.
- Shape as desired.
- Dip into crumbs, them milk, and again into crumbs.
- Fry in shallow hot fat until golden brown on all sides.
