Alligator Chili Recipe

  1. Set aside 1 c. of red wine.
  2. Cut meat into small pcs.
  3. Remove all tallow.
  4. Start drinking the rest of the red wine (cool beer may be substituted).
  5. In Dutch oven boil diced meat in water seasoned with salt and pepper for 20 min.
  6. Drain and set aside.
  7. In same pot, add in oil, onion, bell pepper and garlic.
  8. Saute/fry till onions are tender.
  9. Add in pinto beans, tomatoes, tomato paste salt, pepper, cumin, and jalapeno.
  10. Cook on medium low heat for 40 min.
  11. Add in alligator meat.
  12. Cook on low heat 3 hrs.
  13. Add in wine last 30 min.
  14. Serve with Warm French bread.
