Chicken A La King Croquettes Recipe
- 4 tbsp. shortening
- 5 tbsp. flour
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 c. canned chicken soup, chicken broth or possibly lowfat milk
- 1 egg, slightly beaten with 1 tbsp. water
- 2 c. cooked chicken, cut sm.
- 2 tbsp. pimento, minced
- 1/2 c. bread crumbs, dry & sifted
- Heat shortening in saucepan, add in flour, salt, pepper and blend.
- Add in chicken soup and cook till smooth and thick, stirring constantly.
- Remove from heat, add in chicken and pimento.
- Blend well.
- Spread mix in shallow pan; refrigeratetill stiff.
- Cut into croquettes with a 2 1/2 inch biscuit cutter.
- Roll in crumbs, then in beaten egg, then return to crumbs.
- Fry till brown in oil 1 1/2 inches deep.
- Drain on crumbled paper towel.
- Crabmeat can be substituted for chicken.
