Guava Bar-bq Chicken Thighs

  1. Trim fat off of chicken thighs.
  2. Place chicken in a large bowl, drizzle with olive oil and season with salt & pepper, set aside.
  3. Preheat broiler to norm.
  4. Heat oil in a sturdy pot and saute the garlic, add guava paste, lime juice and water.
  5. Stir constantly at a medium-high heat, until guava paste dissolves and its smooth.
  6. Add in the remaining ingredients, cook on a medium-high heat for about 5 mins, constantly stirring.
  7. Pour sauce over chicken and completely coat chicken, reserving about 1/4 cup.
  8. If sauce begins to thicken again, re-heat over stove.
  9. Cover broiling pan with foil and spray with cooking spray.
  10. Place chicken on pan and broil for 7 minutes on each side, or until done, brushing sauce over chicken 1/2 way through.
  11. Serve hot, garnish with cilantro.
