Cauliflower And Longhorn Quiche

  1. Separate cauliflower into flowerets, rinse and cut into 1/2-inch thick pieces.
  2. Steam until crisp-tender.
  3. Drain and rinse in cold water; drain on paper towels.
  4. Toast almonds on shallow pan in 350u0b0 oven for 8 minutes (if desired).
  5. In blender, combine eggs, milk, mayonnaise, 1/4 cup of cheese, pepper and nutmeg; blend until smooth.
  6. Place cauliflower in bottom of pie shell and sprinkle with almonds.
  7. Pour filling mixture over cauliflower. Sprinkle with remaining 3/4 cup cheese.
  8. Bake on bottom rack of 350u0b0 oven for 30 to 35 minutes.
  9. This can also be made with Brussels sprouts.
