Soft & Crunchy Vegetable Taco
- 1 Tbsp. canola oil
- 1 medium yellow onion, chopped
- 1 fresh zucchini, sliced and quartered
- 2 medium red peppers, sliced into strips
- 2 Tbsp. TACO BELL Taco Seasoning Mix
- 4 TACO BELL HOME ORIGINALS Flour Tortillas
- 1 cup TACO BELL 99% Fat Free Refried Beans
- 4 TACO BELL Crunchy Taco Shells
- 1/2 cup KRAFT 2% Milk Shredded Sharp Cheddar Cheese
- 4 cups red or green grapes Target 1 lb For $2.99 thru 02/06
- 32 oz. (4 cups) nonfat yogurt, favorite flavor
- 32 fl oz (4 cups) , Favorite Flavor, or 32 fl oz (4 cups) drinking water
- Heat oil in medium nonstick skillet; add onions, zucchini and peppers.
- Cook and stir 2 min., then stir in seasoning mix and 1/4 cup water.
- Bring to boil, then reduce heat to medium-low and simmer 6 to 8 min.
- or until vegetables are tender, stirring occasionally.
- Spread each tortilla with 1/4 cup beans.
- Place a crisp taco shell over beans on each tortilla; fold soft tortillas over crisp shells.
- Fill each taco shell with 1/4 of seasoned vegetables and top each with 2 Tbsp.
- cheese.
- Complement meal with 1 cup each grapes and yogurt per person.
- Serve each person an 8 fl oz glass of Sugar Free KOOL-AID, or an 8 fl oz glass of water.
