Soft & Crunchy Vegetable Taco

  1. Heat oil in medium nonstick skillet; add onions, zucchini and peppers.
  2. Cook and stir 2 min., then stir in seasoning mix and 1/4 cup water.
  3. Bring to boil, then reduce heat to medium-low and simmer 6 to 8 min.
  4. or until vegetables are tender, stirring occasionally.
  5. Spread each tortilla with 1/4 cup beans.
  6. Place a crisp taco shell over beans on each tortilla; fold soft tortillas over crisp shells.
  7. Fill each taco shell with 1/4 of seasoned vegetables and top each with 2 Tbsp.
  8. cheese.
  9. Complement meal with 1 cup each grapes and yogurt per person.
  10. Serve each person an 8 fl oz glass of Sugar Free KOOL-AID, or an 8 fl oz glass of water.
