Twice-Baked Sweet Potatoes
- 4 (about 2 pounds) sweet potatoes
- 1/3 cup Land O Lakes Cinnamon Sugar Butter Spread, melted
- 2 tablespoons orange juice
- 2 teaspoons country-style Dijon mustard
- 1 teaspoon salt
- 1/4 teaspoon pepper
- Land O Lakes Cinnamon Sugar Butter Spread, as desired
- Heat oven to 400F.
- Prick sweet potatoes with fork.
- Bake 50-55 minutes or until soft.
- Cool slightly on cooling rack.
- Cut lengthwise slit in potatoes almost all the way through, leaving about 1 inch at each end intact.
- Scoop out flesh, leaving 1/2-inch border on skins.
- Place flesh into bowl; add all remaining ingredients.
- Beat at medium speed until smooth.
- Spoon mashed potato mixture evenly into skins.
- Bake 15-20 minutes or until heated through.
- Top with Cinnamon Sugar Butter Spread, as desired.
