Twice-Baked Sweet Potatoes

  1. Heat oven to 400F.
  2. Prick sweet potatoes with fork.
  3. Bake 50-55 minutes or until soft.
  4. Cool slightly on cooling rack.
  5. Cut lengthwise slit in potatoes almost all the way through, leaving about 1 inch at each end intact.
  6. Scoop out flesh, leaving 1/2-inch border on skins.
  7. Place flesh into bowl; add all remaining ingredients.
  8. Beat at medium speed until smooth.
  9. Spoon mashed potato mixture evenly into skins.
  10. Bake 15-20 minutes or until heated through.
  11. Top with Cinnamon Sugar Butter Spread, as desired.
