Chinese Treasure Chicken
- 2 lb. chicken breasts
- 1 egg white
- 2 Tbsp. cornstarch
- 1/4 c. soy sauce
- 2 Tbsp. vinegar
- 2 Tbsp. sugar
- 1 (1 lb. 4 oz.) can Lychees
- 1/4 c. oil
- 1 1/2 Tbsp. minced candy ginger
- 3 preserved kumquats, sliced
- 6 green maraschino cherries, halved
- 6 red maraschino cherries, halved
- Remove skin and bones from chicken, cut meat into 1-inch pieces.
- Combine chicken pieces with egg white and 1 tablespoon cornstarch.
- In

- bowl,
- mix
- remaining tablespoon cornstarch with the
- soy
- sauce,
- vinegar,
- sugar and 6 tablespoons of the lychee syrup.
- Drain lychees and discard remaining syrup.
- Heat oil in wok or skillet.
- Add chicken and cook on high heat for 3 minutes.
- Add
- candy, ginger and soy sauce mixture and lychees. Cook,
- stirring
- constantly
- until
- sauce
- thickens.
- Stir
- in kumquats and cherries.
- Makes 4 to 6 servings.
