Chinese Treasure Chicken

  1. Remove skin and bones from chicken, cut meat into 1-inch pieces.
  2. Combine chicken pieces with egg white and 1 tablespoon cornstarch.
  3. In
  4. a
  5. bowl,
  6. mix
  7. remaining tablespoon cornstarch with the
  8. soy
  9. sauce,
  10. vinegar,
  11. sugar and 6 tablespoons of the lychee syrup.
  12. Drain lychees and discard remaining syrup.
  13. Heat oil in wok or skillet.
  14. Add chicken and cook on high heat for 3 minutes.
  15. Add
  16. candy, ginger and soy sauce mixture and lychees. Cook,
  17. stirring
  18. constantly
  19. until
  20. sauce
  21. thickens.
  22. Stir
  23. in kumquats and cherries.
  24. Makes 4 to 6 servings.
