Cucumber Ice Cubes

• 2 medium cucumberspeeled, seeded and cut into chunks
• 1/4 cup spinach leaves, tightly packed
• One 4-inch tarragon sprig

1. Combine all of the ingredients in a blender or food processor and puree.
2. Press through a fine strainer to extract the liquid; freeze the extracted liquid in an ice cube tray.
