Feta and Mint Couscous Salad

  1. Prepare toasted pine nut-flavored couscous as label directs.
  2. Meanwhile, combine chopped tomatoes, chopped cucumber, cup chopped dried fruit (any kind, or a mix) and chopped jarred roasted red pepper in a large serving bowl.
  3. Add olive oil, lemon juice and chopped fresh mint; mix well.
  4. Season with salt and pepper to taste.
  5. Fluff couscous with a fork and spoon into serving bowl.
  6. Add a 4-oz.
  7. package crumbled garlic-and-herb-flavored feta cheese; toss well.
  8. Serve with baked pita chips.
