Italian Lamb Shanks

  1. In a large saucepan, heat oil, and butter.
  2. Add lamb shanks, salt and pepper, and cook turning occaissionally until browned on all sides.
  3. Remove shanks, and place in a large casserole dish.
  4. In same pan, add garlic, celery, onions, and carrots.
  5. Stir, and cook 10 minutes until softened.
  6. Add wine, and 1 cup chicken broth of necessary.
  7. Pour over lamb shanks.
  8. Cover with tomato sauce, and top with parsley and oregano.
  9. Cover with Aluminum foil, and cok at 350 degree for 3 to 4 hours.
  10. Serve one shank per person with a heaping spoon of sauce and veges.
