Simple and Oil-free Yatsuhashi Style Cookies with Rice Flour

  1. Add the sugar, milk and baking powder in a bowl and mix with a rubber spatula.
  2. Next add in the rice flour, kinako, and cinnamon and mix.
  3. Place the dough onto the top of a baking sheet lined with parchment paper and then cover the dough with plastic wrap.
  4. Roll out the dough till it's about 2 mm thick and then using a dough scraper.
  5. Cut them into 1 x 3 cm rectangles.
  6. Bake in the oven for about 13 minutes at 170C.
