Simple and Oil-free Yatsuhashi Style Cookies with Rice Flour
- 4 tbsp Rice flour (or Joshinko)
- 3 tbsp Kinako
- 1 tsp Cinnamon
- 1/2 tsp Baking powder
- 3 tbsp Milk (or water)
- 2 tbsp Sugar
- Add the sugar, milk and baking powder in a bowl and mix with a rubber spatula.
- Next add in the rice flour, kinako, and cinnamon and mix.
- Place the dough onto the top of a baking sheet lined with parchment paper and then cover the dough with plastic wrap.
- Roll out the dough till it's about 2 mm thick and then using a dough scraper.
- Cut them into 1 x 3 cm rectangles.
- Bake in the oven for about 13 minutes at 170C.
