Sunday Morning Raisin Loaf

  1. Heat the oven to 325u0b0.
  2. Lightly butter a 9 x 5-inch loaf pan. Heat the orange juice until it is almost boiling.
  3. Put the raisins, butter and orange rind in a bowl and pour the orange juice over them.
  4. Set aside to cool in another bowl.
  5. Beat the eggs with the sugar.
  6. Add the vanilla; stir into the raisin mixture in another bowl.
  7. Sift together the flour, baking powder, soda and salt; add to the raisin mixture.
  8. Stir just until moistened.
  9. Fold in the walnuts.
  10. Lightly spoon the batter into the loaf pan.
