Sunday Morning Raisin Loaf
- 3/4 c. orange juice
- 1 c. raisins
- 4 Tbsp. butter
- 1 Tbsp. grated orange rind
- 2 large eggs (at room temperature)
- 3/4 c. sugar
- 1 tsp. vanilla extract
- 2 c. all-purpose flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/2 c. chopped walnuts
- Heat the oven to 325u0b0.
- Lightly butter a 9 x 5-inch loaf pan. Heat the orange juice until it is almost boiling.
- Put the raisins, butter and orange rind in a bowl and pour the orange juice over them.
- Set aside to cool in another bowl.
- Beat the eggs with the sugar.
- Add the vanilla; stir into the raisin mixture in another bowl.
- Sift together the flour, baking powder, soda and salt; add to the raisin mixture.
- Stir just until moistened.
- Fold in the walnuts.
- Lightly spoon the batter into the loaf pan.
