Radicchio, Endive and Arugula Salad with a Citrus Vinaigrette

  1. Slice the head of radicchio into thin slices.
  2. Cut endive into rounds.
  3. Remove stems from arugula.
  4. Wash under cold water and spin dry.
  5. In a large bowl toss all the greens together.
  6. Season with salt and pepper.
  7. Drizzle with Citrus Vinaigrette (see recipe below).
  8. In a small bowl combine juices and mustard.
  9. Slowly drizzle in olive oil while whisking.
  10. Season with salt and pepper.
  11. Yield: about 1/2 cup dressing
