Coconut & Lime Cream Cheese Pie

  1. Combine coconut and margarine (or butter); press firmly on bottom and up side to rim of 9-inch pie plate.
  2. Chill.
  3. Meanwhile, in a large mixer bowl, beat cream cheese until fluffy.
  4. Gradually beat in condensed milk, then lime juice and food coloring if desired, until smooth.
  5. Fold in whipped topping.
  6. Pour into prepared crust.
  7. Chill 3 hours or until set.
  8. Garnish as desired.
  9. Refrigerate leftovers.
