Flourless Fabulous Chocolate Cake
- 6 eggs
- 12 ounces chocolate
- 2 cups sugar
- 12 lb butter
- 1 teaspoon vanilla extract (optional) or 1 teaspoon raspberry extract (optional) or 1 teaspoon orange extract (optional) or 12 teaspoon mint extract (optional)
- Preheat oven 350F.
- In a double boiler melt butter and chocolate, and let cool.
- Whip eggs and sugar with and electric mixer / beater till soft peaks (this works best if the bowl is cold also).
- Slowly fold chocolate mix into egg mix with extract if desired.
- When well blended.
- Delicately fill a buttered 9"*13" cake pan or 2 9" rounds with batter.
- Bake 350 F, 30 to 45 minutes until browned and solid to the touch.
- Serve alone or with fresh whipped cream.
