Chicken With Milk And Rice
- 2 chickens, cut up
- 3 c. rice
- 2 c. milk
- 3 pieces mastica (Arabic gum) for the broth
- 2 pieces mastica for the butter
- 1 c. cream
- 10 cardamon seed
- 1 1/2 tsp. salt
- 1/4 c. butter
- 12 c. water
- Wash the chicken pieces.
- Place them with the water in a saucepan and boil; add the cardamon seed, mastica and salt.
- Cook for 1 hour.
- Remove chicken pieces and set aside.
- Strain broth and place in the saucepan with the rice; allow to boil, then simmer.
- Add the cream to the milk; mix well.
- When the rice is cooked, add the milk mixture, gently stirring.
- Heat the butter and stir in the 2 pieces of mastica.
- When melted, pour immediately over the rice and cover for 5 minutes.
- Stir the rice mixture and serve in a platter with the chicken pieces on top.
