Pasta Salad(For A Crowd)
- 1 large red pepper, diced
- 1 large yellow or orange pepper, diced
- 2 ripe tomatoes, diced
- 2 large jars marinated artichoke hearts, quartered and leaves cut off
- 1 jar marinated mushrooms, quartered
- 1 can large black olives, pitted and sliced
- 6 oz. shredded Romano cheese
- 6 oz. shredded Parmesan cheese
- 1/2 bottle Caesar dressing
- 1/3 bottle Italian dressing
- 2 pkg. tri-colored rotini
- Cook pasta according to package directions.
- Cut up veggies as indicated; mix together in a bowl.
- Save some of the marinade from the artichoke hearts and the mushrooms.
- After rinsing and draining pasta, add veggies and cheese.
- Mix well, then add the dressing and a couple of ounces of the marinade.
- Mix well, then cover and chill.
- Makes a very large salad; serves up to 20 as a side dish.
