Pumpkin Pecan Harvest Bread
- 1 3/4 c. pumpkin
- 4 egg whites
- 1/4 c. vegetable oil
- 2 c. all-purpose flour
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1 c. brown sugar
- 1/4 c. chopped pecans
- vegetable spray
- 1 Tbsp. confectioners sugar (for dusting)
- Preheat oven to 350u0b0.
- In a large bowl, mix together pumpkin, egg whites and oil.
- In another bowl, sift flour, baking powder, baking soda, cinnamon and nutmeg.
- Add brown sugar and mix well. Add the flour mixture to the pumpkin mixture in 2 or 3 stages and combine well.
- Beat with a whisk or electric mixer at medium speed for about 2 minutes.
- Stir in chopped pecans.
