Diet Veal Scallopini
- 1 lb. veal cutlets, sliced for scallopini (approximately 8 pieces)
- 2 tsp. all-purpose flour
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1 Tbsp. margarine
- 2 tsp. vegetable oil
- 8 oz. mushrooms, sliced (about 2 c.)
- 1/2 c. chicken broth
- 3 Tbsp. dry white wine
- 2 tsp. chopped fresh parsley
- Sprinkle veal with flour, salt and pepper.
- In large skillet over medium-high heat, heat butter and oil.
- When butter melts, add veal and cook for 3 minutes on each side.
- Remove to serving platter and keep warm.
- Add mushrooms, chicken broth and wine to skillet.
- Cook until mushrooms are tender and liquid is reduced to a thickened sauce.
- Pour over veal.
- Sprinkle with parsley. Makes 4 diet servings.
- Contains 255 calories per serving.
