Diet Veal Scallopini

  1. Sprinkle veal with flour, salt and pepper.
  2. In large skillet over medium-high heat, heat butter and oil.
  3. When butter melts, add veal and cook for 3 minutes on each side.
  4. Remove to serving platter and keep warm.
  5. Add mushrooms, chicken broth and wine to skillet.
  6. Cook until mushrooms are tender and liquid is reduced to a thickened sauce.
  7. Pour over veal.
  8. Sprinkle with parsley. Makes 4 diet servings.
  9. Contains 255 calories per serving.
