Rice Pilaf
- 1 onion, diced
- 1/4 c. chopped mushrooms
- 1 small carrot, diced
- 1 stalk celery
- 1 green pepper, diced
- 3 Tbsp. olive oil
- 1 c. raw brown rice
- 2 c. vegetable stock or water
- 1/2 c. raisins or other dried fruit
- 1 tsp. curry or 1 bay leaf
- few cardamon seeds
- 1/2 tsp. turmeric
- 1/2 tsp. ginger
- 1/4 tsp. garlic
- 1/4 tsp. cumin
- 1/4 tsp. cinnamon
- 4 whole cloves
- 1/2 c. pine nuts, chopped
- peanuts, sunflower seeds or almonds
- Saute vegetable in oil.
- When tender, add raw rice and stir over moderate heat until grains are dry.
- Add spices and vegetable stock (or water).
- Cover.
- Cook over low heat 20 minutes. Sprinkle in nuts and fruit.
- Cook 10 minutes more.
