Rice Pilaf

  1. Saute vegetable in oil.
  2. When tender, add raw rice and stir over moderate heat until grains are dry.
  3. Add spices and vegetable stock (or water).
  4. Cover.
  5. Cook over low heat 20 minutes. Sprinkle in nuts and fruit.
  6. Cook 10 minutes more.
