Fabulous Make-Ahead Party Potatoes(Make These Once, And You'Ll Be Famous For Them!)

  1. Peel, cube and cook potatoes until tender, 20 to 25 minutes. Drain well; mash until smooth, adding a little milk if necessary (a KitchenAid-type mixer works well).
  2. Mix cream cheese, sour cream and seasonings (except paprika) together.
  3. Beat into potatoes with
  4. whisk or blender until fluffy.
  5. Taste for seasoning, adding what you think is necessary.
  6. Spoon into 9 x 13-inch casserole dish; sprinkle top with grated cheese, dots of butter and paprika. Cool, cover with foil and refrigerate overnight.
  7. (Flavor is best if casserole is refrigerated a day or two before serving.)
