Fabulous Make-Ahead Party Potatoes(Make These Once, And You'Ll Be Famous For Them!)
- 10 medium or 8 to 9 large potatoes
- 2 (3 oz.) pkg. cream cheese (room temperature)
- 1 c. sour cream
- 1 tsp. onion salt
- 1 tsp. garlic salt or herb salt
- 1/4 white pepper
- 2 to 3 tsp. butter
- 3/4 c. grated Cheddar cheese
- paprika for top
- Peel, cube and cook potatoes until tender, 20 to 25 minutes. Drain well; mash until smooth, adding a little milk if necessary (a KitchenAid-type mixer works well).
- Mix cream cheese, sour cream and seasonings (except paprika) together.
- Beat into potatoes with
- whisk or blender until fluffy.
- Taste for seasoning, adding what you think is necessary.
- Spoon into 9 x 13-inch casserole dish; sprinkle top with grated cheese, dots of butter and paprika. Cool, cover with foil and refrigerate overnight.
- (Flavor is best if casserole is refrigerated a day or two before serving.)
