Italian-Style Seafood Creole

  1. Cook eggplant, zucchini, mushrooms, onion, pepper and celery in hot oil until tender.
  2. Add undrained tomatoes, wine, soy and the seasonings.
  3. Simmer, uncovered, for 30 minutes.
  4. Add shrimp and clams.
  5. Simmer 8 minutes.
  6. Serve in bowls plain, with garlic bread or cooked rice, if desired.
