No Bake lazy Cheesecake
- 2 8 ounce packages cream cheese
- 14 oz can sweetened condensed milk
- 1/4 cup fresh lemon juice
- 1 tsp vanilla extract
- 1 prepared graham cracker crust (9 inch)
- Have ingredients at room temperature.
- Using an electric mixer, beat cream cheese in a large bowl until smooth.
- Beat in condensed milk a little at a time, scraping sides of bowl as necessary.
- Finally, beat in lemon juice and vanilla.
- Pour the filling into crust; smooth with rubber spatula.
- Cover and refrigerate for 5-6 hours until firm but I find it better to refrigerate overnight.
