Chocolate and Coconut Pots
- 90 grams caster sugar
- 250 ml milk
- 3 egg yolks
- 1 tsp vanilla essence
- 2 tbsp cocoa powder (dark chocolate)
- 100 grams dessicated coconut
- Place four ramekins on a baking tray and pourin some water until it reaches about half way.
- Pre-heat an oven to 145c / 125c fan.
- Put the milk, 60g of suger and essence into a pan and bring to boil on a medium heat.
- Whisk the yolks and remaining sugar in a bowl, then add the cocoa powder and whisk some more.
- Tip in the coconut and the gently pour some of the boiling milk in to the bowl, whisking constantly as you do it.
- Then add the contents back in to the pan of milk.
- Reduce the heat and stir until thickened.
- You will know it's ready when you can use your finger to create a line down the spoon and the mixture does not drip.
- Spoon the mixture between the 4 ramekins and then place the oven for 20-25mins until firm to touch.
