Chicken Fettucini Alfredo
- 1/4 c. butter
- 1/4 c. olive oil
- 1 lb. boneless chicken breast, cut into cubes
- 1/2 c. chopped green onions including tops
- 1 clove garlic, minced
- 1/4 c. chopped parsley
- 2 tsp. dried basil
- 1 c. cream
- 1 pkg. pasta prima alfredo sauce (McCormick)
- 12 oz. fresh mushroom slices
- 1 (15 oz.) can tomatoes, drained and chopped
- 1 tsp. salt
- 1/2 tsp. pepper
- 12 oz. fettucini noodles, cooked
- 1/2 c. Parmesan cheese
- Heat
- oil
- in
- skillet; add onions, garlic and chicken. Saute until
- chicken
- is brown.
- Stir in cream, alfredo sauce mix, mushrooms,
- tomatoes, salt and pepper.
- Bring to a boil, reduce heat
- to medium and simmer 5 minutes.
- Stir in parsley and
- basil. Remove
- from
- heat.
- Toss
- with
- cooked pasta and serve with Parmesan cheese.
