Mincemeat Cheesecake Recipe
- 1 prepared pie crust
- 1 3/4 c. mincemeat
- 4 c. mini marshmallows
- 1/3 c. orange juice
- 1 teaspoon orange rind
- 16 ounce. cream cheese
- 1 c. Cold Whip
- In double boiler, heat marshmallows and orange juice till creamy.
- (Don't overcook.)
- Refrigeratetill thickened.
- Beat soft cream cheese and orange rind till fluffy.
- Mix marshmallow mix with cream cheese, then mix in Cold Whip.
- Spread mincemeat in prepared crust.
- Cover with marshmallow mix and chill overnight.
