Avocado-Chocolate Mousse & Peanut Butter Shooters
- 1 tub (8 oz.) COOL WHIP FREE Whipped Topping, thawed, divided
- 3 Tbsp. creamy peanut butter
- 2 oz. BAKER'S Unsweetened Chocolate, broken into small pieces
- 2 small fully ripe avocados (about 7 oz.) Safeway 10 ct For $10.00 thru 02/09
- 2 Tbsp. fat-free milk
- 1/2 cup agave syrup
- 1-1/2 tsp. vanilla
- 1 tsp. multi-colored sprinkles
- Reserve 1/2 cup COOL WHIP.
- Whisk remaining COOL WHIP with peanut butter in large bowl until blended.
- Refrigerate until ready to use.
- Microwave chocolate in microwaveable bowl on HIGH 30 sec.
- to 1 min.
- or until melted, stirring after 30 sec.
- Process avocados with milk in food processor until smooth.
- Add chocolate, agave syrup and vanilla; process 1 min.
- or until blended.
- Spoon 1 Tbsp.
- chocolate mixture into each of 10 (2-oz.)
- shot glasses; cover with layers of peanut butter mixture and remaining chocolate mixture.
- Top with remaining COOL WHIP and sprinkles.
