Oatmeal Honey Bread
- 1 c. quick oatmeal
- 1 c. water
- 2 c. warm water
- 2 Tbsp. dry yeast
- 7 c. all-purpose flour
- 1 tsp. sugar
- 1/3 c. honey
- 1 tsp. salt
- 1/3 c. Puritan oil
- Mix together quick oatmeal and 1 cup water in microwave for 3 1/2 minutes.
- Cool to lukewarm.
- Put 2 cups warm water and dry yeast together in a large bowl and sprinkle with 1 teaspoon sugar. Let begin to work.
- Add oat mixture, honey, salt, oil and flour to yeast mixture.
- Mix well and knead on floured board until smooth and elastic.
- Place in a bowl, greased well with Puritan oil.
- Let rise until double in bulk, about 1 hour.
- Punch down and roll over; let rise again.
- Punch down and form into 2 or 3 loaves, depending on pan size.
- Let rise again.
- Bake at 375u0b0 for 35 to 45 minutes.
- Can be made into buns also.
