Easy Basic Chocolate Chunky Muffins

  1. Bring the butter, egg and milk to room temperature.
  2. Preheat the oven to 180C.
  3. Break each square of chocolate into 4 pieces.
  4. Toast the walnuts in the oven while preheating and crush lightly after they've cooled slightly.
  5. Put the A ingredients in a large bowl and mix well with a whisk.
  6. Cream the butter in a separate bowl with a whisk, add the sugar and egg and blend well.
  7. Mix in the milk and vanilla essence.
  8. Fold the ingredients from Step 3 into Step 2 with a spatula, mixing just until the flour is incorporated.
  9. (Do not over mix.)
  10. Lightly mix in the walnuts and broken chocolate.
  11. Fill the muffin cups about 80% full.
  12. Smooth the tops and bake at 180C for 20~25 minutes.
  13. They're done when a bamboo skewer comes out clean.
  14. Cool on a rack.
