Quick Minestrone
- 2 slices bacon, cut in thin strips
- 1 large onion, chopped
- 1/4 lb. mushrooms, sliced
- 1 clove garlic, minced
- 2 carrots, thinly sliced
- 1 (49 1/2 oz.) large can chicken broth
- 1 (1 lb.) can tomatoes
- 1 tsp. salt
- 1 tsp. dried basil
- 1/4 tsp. thyme
- 1/4 tsp. white pepper
- 4 oz. vermicelli
- 1/2 lb. snap peas
- 1/4 c. chopped parsley
- Parmesan cheese
- In a 5-quart kettle, cook bacon over medium heat until it begins to brown.
- Mix in onion, mushrooms, garlic and carrots. Cook, stirring, until onion is soft.
- Add broth, tomatoes, salt, basil, thyme and pepper.
- Bring to boiling.
- Cover.
- Reduce heat and simmer 15 minutes.
