Coconut Almond Granola

  1. Combine all ingredients in a large bowl and mix thoroughly.
  2. Place on a cookie sheet or baking dish, no more than a half an inch deep.
  3. You will probably need to divide it up into two batches.
  4. Bake on the middle rack in a 350 degree oven, for 20-30 minutes, checking and stirring every 5-10 minutes.
  5. Cool slightly in the pan before transferring into a large bowl, stir every 10-15 minutes as it cools.
  6. It will get crunchy as it cools.
  7. Store in an airtight container for up to 2 weeks.
  8. 1 serving is 1/2 cup, serve with milk or over yogurt and fruit.
