Coconut Almond Granola
- 5 cups old fashioned oats
- 23 cup wheat germ
- 14 cup ground flax seeds
- 1 cup unsweetened dried shredded coconut
- 34 cup chopped almonds
- 12 teaspoon salt
- 1 teaspoon almond extract
- 1 14 teaspoons vanilla extract
- 14 cup sugar
- 23 cup honey
- 12 cup canola oil
- 12 cup coconut oil (I like Nutiva Organic Coconut Oil)
- 1 tablespoon water
- Combine all ingredients in a large bowl and mix thoroughly.
- Place on a cookie sheet or baking dish, no more than a half an inch deep.
- You will probably need to divide it up into two batches.
- Bake on the middle rack in a 350 degree oven, for 20-30 minutes, checking and stirring every 5-10 minutes.
- Cool slightly in the pan before transferring into a large bowl, stir every 10-15 minutes as it cools.
- It will get crunchy as it cools.
- Store in an airtight container for up to 2 weeks.
- 1 serving is 1/2 cup, serve with milk or over yogurt and fruit.
