French Chicken Casserole

  1. Cut chicken into serving pieces.
  2. In a bowl, combine the flour, salt and freshly ground pepper.
  3. Dredge chicken pieces in mixture.
  4. Shake off excess flour.
  5. In a skillet, heat butter. Brown chicken on all sides until golden brown.
  6. Transfer to a Dutch oven.
  7. Peel and chop onion.
  8. Saute in skillet for about 3 minutes until transparent.
  9. Add to chicken.
  10. Add cider and water. Season with tarragon and garlic.
  11. Cook, covered, for 15 to 20 minutes.
  12. Cut apples into wedges.
  13. Remove cores.
  14. Add to chicken. Cook for another 10 minutes.
  15. Add creme fraiche or sour cream. Cook for 10 minutes.
  16. Add calvados.
  17. Season to taste with salt and pepper.
  18. Serve steaming hot, sprinkled with parsley.
