Nisu

  1. Dissolve yeast in warm water.
  2. Stir in milk, sugar, salt, cardamom, eggs, and enough flour to make a batter.
  3. Beat till smooth and elastic.
  4. Add about 3 cups flour and beat well.
  5. Add the melted butter and stir in well.
  6. Beat again.
  7. Stir in remaining flour for a stiff dough.
  8. Turn out on board.
  9. Let rest, covered, 15 minutes.
  10. Knead.
  11. Place onto greased bowl, turn and cover.
  12. Let rise until doubled (about 1 hour).
  13. Punch down and let rise again (about 30 minutes).
  14. Shape on greased bake sheet.
  15. Typically, this bread is braided but it can also just be in the form of a loaf.
  16. Let rise again (about 20 minutes).
  17. Glaze with 1 egg (beaten) and sprinkle with sugar.
  18. Bake at 400F for 25-30 minute Remove when light golden brown.
