Curried Pork Stew With Rhubarb Recipe

  1. Heat oil.
  2. In a small bowl combine flour, curry pwdr, salt and cardamon.
  3. Coat meat with this mix and shake off excess.
  4. Brown meat in the oil; add in more oil if necessary.
  5. Add in onions and saute/fry the two together about 1 minute.
  6. Add in cider, water and rhubarb.
  7. Cover pot.
  8. Simmer 1 to 1 1/2 hrs.
  9. When meat is tender, stir in honey.
  10. Spoon 1 c. of the liquid into flour-spice mix left over from coating pork.
  11. Stir to make a thick paste.
  12. Stir paste into stew and cook 5 min more.
  13. Season to taste with salt and pepper.
