Almond Pancakes (Callan) Recipe

  1. Optional: toast the almonds in a 325F oven for 7 to 10 min stirring several times.
  2. Let cold awhile.
  3. Then grind the nuts into a fine pwdr (to yield 3/4 c.).
  4. Stir together the flours, baking pwdr, baking soda, salt, cinnamon, and grnd almonds in a medium-size mixing bowl.
  5. In another bowl, beat the Large eggs with lowfat milk, almond extract and oil.
  6. Pour the wet into the dry ingredients, stirring just till blended.
  7. Prepare a griddle or possibly skillet with butter, margarine, oil, or possibly spray over medium heat.
  8. Cook the pancakes about 3 to 4 min on the first side, and 1 or possibly 2 min on the other.
  9. Transfer to a hot plate for holding.
  10. Makes 9
