Pepperoni Pizza Salad(Must Be Refrigerated For Several Hours Before Serving.)
- 10 plum tomatoes, chopped
- 3 medium green peppers, cut up
- 2 c. shredded mozzarella cheese
- 1 (3 1/2 oz.) pkg. pepperoni
- 1 (2 1/4 oz.) can sliced ripe olives
- 1/4 c. chopped onion
- 1/3 c. tomato juice
- 1/4 c. red wine, vinegar or cider vinegar
- 1/4 c. vegetable oil
- 1 clove garlic, minced
- 1/2 tsp. dried basil
- 1/4 tsp. pepper
- 3/4 c. seasoned salad croutons
- In large bowl combine the tomatoes, green peppers, cheese, pepperoni, olives, and onion.
- In a small bowl combine the tomato juice, vinegar, oil, garlic, basil and pepper; mix well. Pour tomato mixture over and toss to coat.
- Cover and refrigerate for several hours.
- Just before serving sprinkle with croutons.
