Cheryl's Chinese Chicken
- 1 medium roasting chicken, cleaned and patted dry
- salt, to taste
- pepper, to taste
- 14 cup vegetable oil
- 14 cup sherry wine
- 2 tablespoons fresh ginger, peeled and sliced
- 4 scallions, cut into 1 inch pieces
- 2 garlic cloves, crushed
- 12 cup dark soy sauce
- Mix all ingredients execpt the chicken.
- Place chicken in a roasting pan.
- Pour the marinade onto the chicken and into the cavity of the chicken.
- Marinate at least overnight.
- Cook, uncovered in the marinade approximately 1 hour at 400 degrees F. basting frequently.
- Make sure chicken is cooked through and juices run clear.
