Wally'S Chili
- 5 lb. pork, beef, etc., diced
- 3 medium onions, diced
- 2 jalapenos, chopped or 2 tsp. crushed red pepper
- 1 Tbsp. salt
- 3 Tbsp. comino
- 5 Tbsp. chili powder (fresh as possible and very red)
- 1/4 tsp. oregano
- 1 tsp. celery salt
- 1 (303 size) can tomato sauce
- 2 Tbsp. bacon drippings
- 5 cloves garlic, crushed
- 1 Tbsp. white pepper
- 1 Tbsp. paprika (Hungarian if possible)
- Brown meat in bacon drippings.
- Add tomato sauce and seasonings.
- Add enough water to make correct consistency.
- Simmer for 45 minutes.
- Never use a lid when making chili.
- Simmer longer for a more spicy chili.
- Do not put beans or anything else in this chili.
- It will only take away from the flavor.
