Bacon Hugged Shrimp With Basil-Garlic Stuffing

  1. Preheat oven to 400F.
  2. Peel and devein shrimp, leaving tails on.
  3. Butterfly shrimp by cutting a slit along the back and gently pressing open.
  4. Combine basil, parmesan, and garlic in a small bowl.
  5. Place basil mixture evenly in shrimp openings; pressing shrimp closed.
  6. Cook bacon over medium heat until partially cooked.
  7. Drain on paper towels.
  8. Wrap each shrimp with 1 slice bacon, and place on greased baking sheet.
  9. Mix sauce ingredients in a small bowl and microwave for 60 seconds.
  10. Brush sauce over shrimp, and bake 8 to 9 minutes.
