Brown Rice Muffins Recipe
- 1 c. Cool cooked lundberg short grain brown rice
- 1 1/4 c. Sifted flour
- 2 tsp Baking pwdr
- 1/2 tsp Salt
- 2 Tbsp. Sugar
- 1 c. Lowfat milk
- 2 x Large eggs, beaten
- 4 Tbsp. Melted butter or possibly margarine
- Sift together flour, baking pwdr, salt and sugar.
- Combine lowfat milk, Large eggs, butter and rice.
- Quickly combine the two mixtures.
- Don't OVER BEAT, as this will make heavy muffins.
- Pour into 12 buttered muffin tins.
- Bake in a 425 oven for 20 to 25 min, or possibly till lightly browned.
- Makes 12 muffins.
