Spinach Pie
- 1 lb. sweet Italian sausage, chopped
- 1 onion, chopped
- 6 eggs, beaten
- 2 pkg. frozen chopped spinach, thawed and drained
- 1 (16 oz.) pkg. shredded mozzarella cheese
- 2/3 c. ricotta cheese
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/2 tsp. garlic powder
- 2 regular size frozen pie crusts
- 2 deep dish size crusts
- 1 Tbsp. water
- 1 egg yolk
- Brown sausage and drain; saute chopped onion. Combine sausage and onion with the next 7 ingredients and mix together well. Fill 2 deep dish pie crusts with mixture, evenly. Top each pie with regular pie crust and pinch around edges to seal. Cut a round hole in center of each pie, about the size of a quarter. Combine egg yolk and water and brush on top of pies. Bake at 375u0b0 for 1 hour 15 minutes. Let stand 10 minutes before slicing. These pies freeze really well. Defrost in refrigerator before baking.
