Chive Pepper Muffins

  1. Preheat the oven to 350F.
  2. Line 8 muffin cups with paper liners.
  3. In a large bowl, combine the almond flour, salt, baking soda, and black pepper.
  4. In a medium bowl, whisk together the olive oil and eggs.
  5. Blend the wet ingredients into the almond flour mixture with a handheld mixer until thoroughly combined, then stir in the chives.
  6. Scoop 1/4 cup of batter into each prepared muffin cup.
  7. Bake for 20 to 25 minutes, until a toothpick inserted into the center of a muffin comes out with just a few moist crumbs attached.
  8. Let the muffins cool in the pan for 20 minutes, then serve.
