Chocolate-Pudding Cake
- 3/4 c. flour
- 2/3 c. sugar
- 1/2 c. unsweetened cocoa powder
- 1 1/2 tsp. baking powder
- 1/4 c. chocolate chips
- 1 1/2 c. hot water
- 1/2 tsp. salt
- 1/2 c. milk
- 3 Tbsp. vegetable oil
- 2/3 c. packed light brown sugar
- 1 tsp. vanilla extract
- Heat oven to 350u0b0.
- Put flour, sugar, 1/4 cup cocoa, baking powder and salt in a deep dish baker.
- Stir to mix well.
- Add milk and oil.
- Stir until well blended.
- Sprinkle brown sugar, remaining 1/4 cup cocoa and chocolate chips over the batter.
- Mix vanilla with water and pour evenly over the top (try almond extract instead of vanilla sometime).
- Bake at 350u0b0 for 30 to 35 minutes or until surface looks dry and brownie-like.
- Serve warm with ice cream or whipped cream.
- Makes 9 servings; 243 calories each.
