Tacos Verde, Blanco, Y Rojo(Green, White And Red Tacos)
- 1 small onion, chopped
- 1 Tbsp. cooking oil
- 1 (8 oz.) can tomato sauce
- 2 pickled serrano or jalapeno peppers, rinsed, seeded and chopped or 1/2 tsp. crushed red pepper
- 1/4 tsp. salt
- 2 c. chopped, cooked chicken breasts or pork
- 2 Tbsp. cooking oil
- 12 (6-inch) tortillas
- 2 c. guacamole
- 1/2 c. sour cream
- Cook onion in the 1 tablespoon oil until tender; stir in tomato sauce, peppers and salt.
- Simmer, covered, for 5 minutes.
- Stir in chicken or pork; heat thoroughly.
- Keep warm.
- In small skillet, heat the 2 tablespoons oil.
- Holding tortillas with tongs, dip each tortilla in the hot oil for about 10 seconds or just until limp. Drain on paper toweling.
