Zaru Soba (Japanese Buckwheat Noodles)

  1. Prepare the tsuyu (dipping sauce).
  2. In a small saucepan bring the water to a slow boil.
  3. Add dashi soup stock and simmer for 4-5 minutes.
  4. Add shoyu and mirin and simmer for an additional 2-3 minutes.
  5. Remove from heat and cool.
  6. Meanwhile, bring a large pot of water to a boil and cook soba noodles for 3-4 minutes or accordingly to package instructions.
  7. Drain the soba and rinse well with cool water.
  8. Shake of the excess water and plate the noodles.
  9. Top with a garnish of nori and serve with scallions, wasabi, and tsuyu dipping sauce.
